Thyme is the dried leaves and flowering tops of the Thymus plant. The narrow, grayish-green leaves are distinctively warm and aromatic. There are three species of Thyme. Most either is Winter Thyme (Thymus hyemalis) or Red Thyme (Thymus zygis). Thymus vulgaris, known as Gray Thyme is the least known. There were previously thought to be three varieties of Thymus Vulgaris but now are known to be three separate species.
